CHICKEN Porridge /Chao Ga

CHICKEN Porridge
*WARNING!!! this doesn't have measurements, what is there is approx... its more of a put a little in taste add a little more as needed.
*add more or less as need or to your tasting
6-8 drumsticks or chicken breast boiled for about 30 min
1-1.5 c rice
1-2 tbsp oil
1 tbsp garlic
*4-5 c water
*1-2 tbsp ginger powder or 1 numb slices
*1/3 c sugar
* 2-3 tbsp salt
GARNISH:
bean sprouts
green onions
fried onion
cilantro
black pepper
chili sauce or sriracha
---in a large pot add a little oil and raw rice cook till rice starts to turn white, add garlic,
add water (for more soupy add 5 c, for more porridge 3.5-4 c)
boil to simmer for 30-60 min til rice is soft... you can wait til it gets super thick if you like that.
strain chicken, set a side...
Reserve chicken stock, add some or all to the soup for chicken flavor, or add chicken broth from a can if you prefer (sometimes i skip this step)
add ginger, sugar, salt to find the taste you like...
in bowl pull chunks or shred chicken, soup, add garnish on top.
they also make scones and dip in it... we don't usually make that part.
