Pot Pie

Pot Pie
1/3 cup butter
1/3 cup. Chopped onion
1/3 cup flour
1/2 tsp salt
1/4 tsp pepper
1 3/4 cup chicken broth (or 1 can)
1/2 cup milk
2 1/2 cup cubed chicken (about 3 breasts) or rotisserie..or left over turkey
2 cups frozen mixed veggies
Crust: 1 box refrigerated pie crust
Melt butter over low-medium heat, add onion and cook for 2 minutes until tender. Stir in flour, salt and pepper till well blended. Gradually stir in broth and milk until thick. (the slower you add the liquids the better to prevent lumps) Stir in chicken and veggies.
In a pie crust, pour chicken/veggie mixture
 Bake at 425 for 30-40 min.
